Christmas Special: Marie Biscuit Chocolate Log


I'm just in time for a holiday recipe. I really wanted to do one last recipe post this year and so here it is 😊

I'm in India thoroughly enjoying the holidays and hence I was not able to devote a lot of time to this blog post. I chose this recipe because it is from a blog I trust and I've made it before in Singapore. I thought it turned out quite nice with minimum effort and it is one of those recipes that you must have in case of a dessert emergency (which is a real thing by the way). 

This recipe is as easy as it gets you guys. You have a handful of basic ingredients, no cooking involved and with only a few hours of setting time in the fridge, you have a simple and yummy dessert ready to serve. Kids will like it for sure (mine do) but since this dessert is eggless and not very sweet, I am assuming it will appeal to everyone. 

I realized that the cocoa powder I use in Singapore is far superior than the one I used in India for this blog post and hence the color and taste of the dessert was much better in my previous executions. Try to get your hands on good brand of unsweetened cocoa powder and you will are good to go.

Marie Biscuit Chocolate Log

Preparation time: 20 mins
Cook time: 1 min
Total time: Under 25 mins
Makes: 10-12 slices; Serves: 4-5

Ingredients:

20 Marie biscuits
¼ cup milk
½ tsp instant coffee powder
¾ cup unsalted butter, softened to room temperature 
¼ cup icing sugar 
a pinch of salt
2 tbsp unsweetened cocoa powder
2-3 drops of vanilla extract, Optional

Method:

1. Place the softened butter in a bowl and add the icing sugar and cocoa powder along with vanilla extract (if using) and a pinch of salt. Mix thoroughly until you get a soft mixture like frosting


2. Heat the milk and add the coffee powder. Mix well to combine


3. Take the first Marie biscuit and dip into the hot milk for 5 seconds (not longer or the biscuit will get soggy). Remove and place on a plate

4. Take about 1 tsp of the chocolate frosting and smear over the Marie biscuit. Take the second biscuit and repeat the same process until you have a long biscuit stack with chocolate frosting in between

5. Smear the remaining chocolate frosting all over the biscuit tower generously


6. Refrigerate this biscuit tower for approximately 2 hours or overnight

7. Take it out and lay down on a cutting board. Use a fork to create lines over the chocolate log to resemble the lines on a wooden log


8. Cut slightly diagonally to get your log cookies, the biscuits would be soft by then

9. Serve immediately or keep chilled until ready to serve


Notes:
  • You can try the same recipe with digestive biscuits too
  • If the chocolate coating starts to melt once left outside, refrigerate again. To minimize this, make sure to use icing sugar rather than regular powdered sugar, which has more moisture
  • You need the butter to be soft but not melted. Let the butter come to room temperature and do not soften it in the microwave otherwise it may melt
  • You can sprinkle some chopped nuts, chocolate shavings or shredded coconut over the chocolate log for extra appeal, texture and flavour
